Ingredients:
For Grilled Mahi Mahi:
• 4 Mahi Mahi fillets
• 2 tablespoons olive oil
• 1 teaspoon ground cumin
• 1 teaspoon smoked paprika
• Salt and black pepper to taste
• Lime wedges for serving
For Mango Salsa:
• 2 ripe mangoes, peeled, pitted, and diced
• 1/2 red onion, finely chopped
• 1 red bell pepper, diced
• 1 jalapeño, seeds removed and finely chopped
• 1/4 cup fresh cilantro, chopped
• Juice of 1 lime
• Salt to taste
Instructions:
1. Preheat the grill to medium-high heat.
2. In a bowl, combine olive oil, ground cumin, smoked paprika, salt, and black pepper. Coat Mahi Mahi fillets with this mixture.
3. Grill Mahi Mahi fillets for about 3-4 minutes per side, or until the fish is cooked through and has grill marks.
4. While the Mahi Mahi is grilling, prepare the mango salsa. In a separate bowl, combine diced mangoes, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Mix well.
5. Once the Mahi Mahi is done, serve it with a generous scoop of fresh mango salsa on top.
6. Garnish with additional cilantro and lime wedges.
