Miso Black Cod

Ingredients:

• 4 black cod fillets (about 6 ounces each)
• 1/2 cup white miso paste
• 1/4 cup sake
• 1/4 cup mirin
• 3 tablespoons sugar
• Sesame seeds for garnish (optional)
• Sliced green onions for garnish (optional)

Instructions:

1. In a bowl, whisk together white miso paste, sake, mirin, and sugar until the sugar dissolves, creating the marinade.
2. Pat the black cod fillets dry with paper towels. Place the fillets in a shallow dish or a zip-top plastic bag.
3. Coat the black cod fillets with the miso marinade, ensuring they are well covered. Marinate in the refrigerator for at least 24 hours, turning the fillets occasionally to distribute the flavors.
4. Preheat your oven’s broiler.
5. Remove the black cod fillets from the marinade and scrape off excess miso. Place the fillets on a baking sheet lined with foil.
6. Broil the black cod for about 8-10 minutes or until the edges caramelize and the fish flakes easily.
7. Optional: Sprinkle sesame seeds and sliced green onions over the black cod for garnish.
