Ingredients:
• 1 pound large sea scallops, dry-packed
• Salt and black pepper to taste
• 2 tablespoons olive oil
• 2 tablespoons unsalted butter
• 3 cloves garlic, minced
• Zest of 1 lemon
• 2 tablespoons fresh lemon juice
• Chopped fresh parsley for garnish
Instructions:
1. Pat the scallops dry with paper towels and season them with salt and black pepper.
2. Heat olive oil in a large skillet over medium-high heat until it’s hot but not smoking.
3. Add scallops to the skillet, making sure not to overcrowd them. Cook for 1.5-2 minutes on each side or until golden brown and caramelized.
4. Remove scallops from the skillet and set them aside.
5. In the same skillet, add butter, minced garlic, lemon zest, and lemon juice. Cook for about 1-2 minutes, stirring constantly.
6. Return the seared scallops to the skillet, coating them with the lemon garlic butter sauce.
7. Garnish with chopped fresh parsley before serving.
