Teriyaki Glazed Salmon

Ingredients:

• 4 salmon fillets (6-8 oz each)
• 1/4 cup soy sauce
• 2 tablespoons mirin
• 2 tablespoons sake (or white wine)
• 2 tablespoons brown sugar
• 1 tablespoon honey
• 1 tablespoon fresh ginger, grated
• 2 cloves garlic, minced
• 1 tablespoon sesame oil (optional)
• Sesame seeds and chopped green onions for garnish
• Cooked white rice for serving

Instructions:

1. In a bowl, whisk together soy sauce, mirin, sake, brown sugar, honey, grated ginger, and minced garlic to create the teriyaki sauce.
2. Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them. Let it marinate for at least 15-30 minutes.
3. Preheat the oven to 400°F.
4. Heat a skillet or oven-safe pan over medium-high heat. Add sesame oil if using.
5. Remove the salmon from the marinade (save the marinade for later) and sear each fillet for 2-3 minutes on each side until browned.
6. Brush the reserved teriyaki sauce over the salmon fillets.
7. Transfer the skillet to the preheated oven and bake for about 10-12 minutes or until the salmon is cooked through and flakes easily.
8. While baking, periodically baste the salmon with the teriyaki sauce from the pan.
9. Garnish with sesame seeds and chopped green onions.
10. Serve the teriyaki glazed salmon over cooked white rice, drizzling extra sauce if desired.
